Rose Masala Chai

Strong, authentic, homemade chai with the lightly sweet, floral flavor of rose. It’s perfect for Valentine’s Day or, really, any spring or summer day. As always, share a cup of this tea with someone you love.

Ingredients
  

For the Rose Syrup Simple Syrup

  • 1-3 tsp rose water to taste
  • ½ cup granulated sugar
  • ½ cup water

For the Tea

  • 2 cups cold water
  • 2 Tbsp Rose Masala Chai mix (I used Kolkata Chai Co.)
  • 2 cups whole milk (or your preferred milk)
  • 2 Tbsp Rose simple syrup per this recipe

Instructions
 

Make the rose simple syrup

  • In a small saucepan, combine the water, sugar and rose water. Cook on medium heat, stirring until the sugar has dissolved. When the water comes to a simmer, remove from heat and set aside to cool.

Make the rose masala chai

  • In a medium saucepan, add the cold water and Kolkata Chai Co. Rose Masala Chai Mix. Stir slightly and bring to a boil on medium heat.
  • When the water is at a rolling boil, add all the milk and stir. Bring the milk to a boil, watching carefully so that it doesn't boil over. As you watch, stir to aerate the tea until it is foamy, about 5 minutes.
  • When the milk is bubbling and the foam almost reaches the top of the pan, remove from heat.
  • Add the rose simple syrup and stir. Return the pot to heat on low stirring to aerate. Cook an additional 1-2 minutes.
  • Remove from heat and strain tea into two large mugs. Serve with biscuits or other sweet treats.

Notes

Make ahead: It's not recommended to make the chai ahead of time, but you can make the rose syrup ahead. Just store it in a sealed container in the fridge for up to 2 weeks.
